  • Sugar
  • Salt
  • Yeast
  • Citric Acid
  • Psyllium Husk
  • Oil

Instructions

  1. Activate Yeast: In a small bowl, combine the warm water, sugar (or honey), and yeast. Set it aside for about 5-10 minutes until it becomes frothy.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the non-wheat composite flour, potato starch, flaxseed meal, xanthan gum, and salt.
  3. Combine Wet Ingredients: Add the olive oil (or melted coconut oil) and vinegar to the activated yeast mixture.
  4. Mix and Knead: Pour the wet ingredients into the bowl of dry ingredients. Mix until it forms a dough. Then, knead the dough for about 5-8 minutes until it's smooth and elastic.
  5. First Rise: Place the dough in a lightly greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1-1.5 hours or until doubled in size.
  6. Shape and Second Rise: After the first rise, punch down the dough and shape it into a loaf. Place the shaped dough into a greased loaf pan. Cover it again and let it rise for another 30-45 minutes until it rises above the edges of the pan.
  7. Preheat Oven: Preheat your oven to 375°F (190°C) while the dough is undergoing its second rise.
